Zesty Baja-Style Broiled Mackerel
- 6-8 fresh wild-caught fillet of mackerel
- 1/4 ?? olive oil
- 2 garlic cloves, chopped
- sea salt
- paprika, cumin
- cilantro and pomegranate seeds to garnish
Preheat the grill to 220C. You will want the top rack near the top of the oven.
Mix the garlic and olive oil in a small bowl, then rub onto both sides of the mackerel.
Give a generous sprinkling of cumin and paprika spice (to taste).
Add salt and pepper, and lime slices to the fillets.
Place under the grill for about 6-8 minutes. The flesh flakes easily with a fork when done.
Garnish with chopped cilantro and pomegranate seeds.
This fish tastes great with a Swiss chard slaw as a side or use together in a fish taco.
