Ingredients
- 5-6 medium carrots
- ¼ cup chopped almonds (toasted)
- 1 bunch fresh coriander
For the Salad Dressing
- ~3 tbs turmeric root freshly grated
- ~1 tsp ginger freshly grated
- 1 garlic clove
- ¼ tsp black pepper
- ½ tsp cinnamon
- 1 tsp honey
- 3 tbs almond butter
- ½ cup coconut milk
And to taste at the end:
- pinch of salt
- lemon juice
Method

Put the dressing ingredients in a blender and process until smooth.

Grate or 'spiralise' the carrots (I love the look when I use a veggie peeler to create thin ribbons, another option).

Toast the almonds and chop roughly.

Mix the carrots and a big handful of chopped coriander in a bowl, drizzle the dressing generously on top and sprinkle with the toasted almonds.

Add a squeeze of fresh lemon juice and salt if desired.
